Chef Sid puts a twist on grilled salmon

Chef Sid and his wife, Minnie (L) are proud supporters of British Columbia’s seafood.

Salmon is a fish every culture gravitates to in British Columbia. Most people start out using salmon in their traditional recipes from “back home” and quickly make salmon their fish of choice for every recipe.

Commercial Drive, Vancouver’s most eclectic neighbourhood, is home to many culturally diverse restaurants and Siddhartha’s Indian Kitchen thrives among them.

This succulent salmon was marinated for an hour in a spicy Indian masala, then the salmon was removed and grilled over hot flames. Meanwhile the leftover marinade was made into a creamy sauté to serve with the rice and vegetables.

This chef is known for creating new and interesting Indian dishes with salmon, mussels, oysters, prawns, and clams.
