Jaimie’s Crispy Skin Salmon with Pesto Vegetables


Today’s recipe is Crispy Skin Salmon, cooked to perfection. With homemade Pesto, Sprouting Broccoli, French Beans and New Potatoes.

Today’s recipe is Crispy Skin Salmon, cooked to perfection. With homemade Pesto, Sprouting Broccoli, French Beans and New Potatoes.

Crispy Skin Salmon with Vegetables and Pesto

INGREDIENTS:

  1. 4 fillets farm raised salmon
  2. 12 new potatoes
  3. 2 bundles sprouting broccoli
  4. 4 handfuls green beans
  5. 1 clove garlic
  6. ½ cup raw pine nuts
  7. 1 big bundle basil leaves
  8. Juice of ½ lemon
  9. olive oil
  10. 1 cup grated parmesan cheese
  11. salt and pepper to taste

METHOD:

  • Boil the baby potatoes in a large pot of water for 15 minutes. Add the French beans and cook for an additional 5 minutes. Add the broccoli and cook for another minute, drain and leave in the pot.
  • In a large nonstick pan, lay the salmon fillets skin side up in the cold pan and place over medium-high heat for 2 minutes. Lower the heat to medium, turn over onto the skin side, and cook for another 4-5 minutes.
  • In a mortar, smash the garlic and salt with the pestle, add the nuts and grind to a paste. Now add the basil, grind again, and finally add the lemon juice, oil, and parmesan. Grind to a grainy paste.
  • Smash the potatoes so it opens up to all the yummy pesto, toss the pesto with the vegetables.
  • Plate it by dividing the vegetables into four servings, place one salmon fillet on each plate. Enjoy a fast and healthy family meal.
