With extensive culinary experience in some of Toronto, Ottawa and Vancouver’s renowned kitchens, H2 Rotisserie & Bar Chef Caitlin Mark brings a diverse blend of flavours and techniques to The Westin Bayshore, Vancouver.
In 2015, Chef Caitlin Mark designed menu concepts, assisted with food production and executed private menu tastings for clients in her role as Sous Chef at Vancouver’s The Butler Did It Catering.
Shortly after, she rose to become Senior Sous Chef at Burgoo Bistro’s Kitsilano location, giving her an outlet to grow her fondness for preparing quality comfort food.
During her time at Vancouver’s Quince Culinary in 2015, Chef Caitlin served as Assistant Instructor, where she led group cooking classes to inspire others to get creative in the kitchen.
Today, Chef Caitlin’s passion culminates at H2 Rotisserie & Bar where she shares her elevated, yet approachable dishes with local and international guests. Chef Caitlin has influenced the recipes for H2’s signature farm to table offerings, like the flagship Maple Hill Farms rotisserie chicken and prime rib rotisserie, as well as brunch essentials like the smashed avocado toast.
The highlight of Chef Caitlin’s job is highlighting the best that the local region has to offer and infusing these ingredients into H2’s elevated, yet approachable comfort foods.
Chef Caitlin Mark continues to inspire others to get crafty in the kitchen by leading H2’s private and seasonal culinary classes, and sharing her knowledge with audiences on CTV News, Fairchild Radio and Roundhouse Radio.
