Today’s featured dish is Maple-Mustard Glazed Sheet Pan Salmon.

Maple-Mustard Glazed Sheet Pan Salmon

In this ultimate “Great Canadian” sheet pan recipe, an ultra-quick glaze of East Coast maple syrup, a classic Prairies ingredient — mustard! — and a touch of smoky barbecue sauce makes the perfect lacquered finishing touch for Canadian salmon fillets. This quick-prep recipe cooks in mere minutes, whether you prepare it in the oven or try our air fryer variation.

  • Prep time: 3 minutes
  • Cook time: 10–12 minutes
  • Primary ingredient: Salmon
  • Serves: 4 servings

Ingredients

  • 600 g (1.3 lb) skinless Canadian salmon fillet portions, divided into 4 equal parts of 150 g (0.3 lb) each.
  • Pinch each salt and pepper
  • 2 tbsp (30 mL) dark maple syrup
  • 2 tbsp (30 g) grainy Dijon mustard
  • 2 tbsp (30 mL) barbecue sauce

Steps

  1. Arrange salmon fillets on lightly greased, foil-lined baking sheet. Sprinkle with salt and pepper.
  2. In a small bowl, stir together maple syrup, mustard and barbecue sauce until combined. Brush salmon with half of the glaze.
  3. Bake in preheated 400°F (200°C) oven, brushing with remaining glaze halfway through cooking, until fish flakes easily when tested with a fork; about 10 minutes. Broil on high heat until browned; about 1 minute.

Variation: Air Fryer Maple-Mustard Glazed Salmon

Arrange salmon fillets in basket of air fryer. Proceed with recipe as directed, reducing cooking time to 8–10 minutes and skipping the broiling step.

Chef’s Tips

  • Any type of maple syrup or your favourite local honey will work for this delicious glaze.
  • For a hit of colour and freshness, sprinkle finished salmon with finely chopped chives, parsley or green onion.

The Wine
Narrative 2017 Cabernet Franc

Summerland, Okanagan Valley, British Columbia, Canada
Sometimes a wine can surprise you. Sourced from organic vineyards in Kaledon and Osoyoos, this wine from the folks at Haywire was fermented and aged in concrete tanks. Medium bodied and modestly complex, clean, crisp, smooth, with fine tannins, no oak, and flavours of black currant, plum, pepper, earth. It is now at its peak and has developed beautifully. Drink it slightly chilled. – winesomm.ca
