Meet BC Seafood Festival guest chef Eva Chin
Born and raised on a farm in Hawaii, Eva grew up surrounded by the tropical bounty that Mother Nature has to offer – the mountains, the ocean, and the earth.
Her grandparents were farmers and fishermen, and since she was young, she greatly appreciated how food was sourced naturally and wanted to pursue the path of farm to table cooking. She believes that food brings strangers together and that a single bite can change a whole perspective.
Eva has staged and cooked at renowned restaurants around the world, including Maaemo in Norway, Jason Atherton’s Pollen Street Social, and Brae, in Australia. Working under Shane Osborn, she credits much of her cooking style and success to him.
Prior to Royal Dinette, Eva cooked in the Hawksworth locally, and right before Royal Dinette, she was staging with Katy Millard at Coquine, Portland and with Dominique Crenn at Atelier Crenn, San Francisco.
In her free time she can be seen chasing the waves down the Oregon Coast and setting up a driftwood fire to cook for friends by the beach.
